Quick Quinoa [Indian fusion Recipe]

Quick Quinoa is a very easy recipe to prepare. I like to include it as a side dish with dinner instead of rice because of quinoa's high levels of protein, fiber and other important nutrients. It is also vegetarian and gluten free. It really is super simple: boil the quinoa until the little tails appear and it is tender, cook the garlic and carrots in spiced oil, mix it all together, and serve. I include Quick Quinoa with chicken, beef and other vegetarian entrées.


1 cup quinoa
​2 cup water
2 Tbs olive oil
2 tsp cumin seeds
1 carrot, thinly sliced
4 garlic cloves, minced
3/4 tsp ground cumin
3/4 tsp ground coriander
1/2 tsp red chile powder
3/4 tsp salt
1/2 tsp black pepper
2 green onions, white and green parts
​ thinly sliced


1. In a large pot combine quinoa and water per package instructions. Bring to a boil, cover and reduce to a simmer for 10-15 minutes or until the quinoa is cooked and tender. Remove from heat. Drain off any excess water and set aside.

​2. While the quinoa is cooking, heat the olive oil in a large pan over medium-low heat. Add the cumin seeds. When they start to pop, add the carrots. These the carrots cook just until tender, about 3 minutes. Add garlic and powdered spices. Mix and cook on low for 3 minutes. Add quinoa and stir until well combined.
