2 tablespoons olive oil
2 garlic cloves, minced
1/2 teaspoon mustard seeds
1/8 teaspoon turmeric
1/4 teaspoon red chile powder
1/4 teaspoon garam masala
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 pound Dutch yellow potatoes, halved
Cooking spray
2 Tbs cilantro, chopped
Dutch yellow potatoes are small waxy potatoes with light yellow skin and yellow flesh; they look like baby Yukon golds. Their flavor is light with a creamy texture so they are perfect for roasting with a simple Indian blend of spices.
1. Preheat oven to 400°.
2. In a large bowl. combine the olive oil, garlic and spices. Stir to mix. Add the potatoes and toss to coat evenly with the masala.
3. Spray a baking dish with cooking spray. Arrange the potatoes and any remaining masala in a single layer. Bake at 400° for 20 to 25 minutes or until potatoes are browned and tender. Garnish with cilantro.
