1. Heat 1 tablespoon of oil in a saucepan on medium heat. Fry the coriander, chiles, Bengal gram dal, cumin seeds and asafetida for a few minutes. Add the coconut and a few curry leaves and fry for a few minutes more.
2. Grind the mixture in a blender until it is a very fine powder. Store in an airtight container until use.
- Make Sambar Podi in advance and use when preparing Sambar.
2 Tbs coriander seeds
6 dried red chiles
1Tbs Bengal gram dal
1 tsp cumin seeds
1 tsp asafetida
A good Sambar Podi (powder) spice mixture is the secret to making excellent Sambar. It can be made ahead for future use. It can be purchased in packages at the Indian grocery but fresh Sambar Podi always has the best flavor.
