1. Boil the pomegranate juice in a small saucepan over medium-low heat. Continue boiling until it reduces to 1/4 cup then remove from heat and let cool.

2. Pour the pomegranate reduction into a bowl. Mix in the sugar, salt and red wine vinegar. Slowly whisk in the oil until well blended.

3. Arrange the greens on 4 plates then arrange the grapes, apple slices and walnuts on the top. Pour the dressing over the salads and garnish with  pomegranate seeds.


6 cups salad greens 
1/2 cup red grapes
1 apple, thinly sliced
1/4 cup walnut halves
1/4 cup pomegranate seeds 
Pomegranate Dressing:
1 cup pomegranate juice
1 tsp sugar
1/2 tsp salt
2 Tbs red wine vinegar
1/4 cup canola oil
