STEPS:

1. In a pan over medium heat, add oil and then add the mustard seeds. When they pop, add the urud dal and curry leaves and fry for a few 

minutes until the dal turns golden brown. Add the beans, turmeric, salt and a half-cup of water.


2. Reduce the heat to medium-low. Cover the pan, stirring from time to time. After 5 minutes add the grated coconut and chiles. Continue to cook until the beans are done and water has evaporated. Stir and remove from the heat.


TIPS:

- This dish can be served along with any meal.

- I have reduced the amount of oil in which the spices are fried. To give this dish a richer flavor, increase the oil to 1 tablespoon.

6 curry leaves

1/4 tsp turmeric

1/2 tsp salt

Pacha Payru Upperi  [Indian Vegetarian recipe]

Pacha Payru Upperi, translated as Green Beans Side Dish, is another traditional item that is usually served at lunch or dinner. This is one of my favorite dishes because it is light and the flavors are very simple. This dish is very easy and quick to make. It makes a colorful addition to any meal.
