1. Soak the red beans overnight.
2. Rinse the red beans and boil them in a large pot with 2 cups of water until tender.
3. Peel and cut the pumpkin into 1 inch pieces. Add the pumpkin to the cooked red beans. Boil for 10 minutes. Add the green chilies, ginger, coconut milk and salt. Boil for a minute and mix well. Remove from heat.
4. Season with the coconut oil and a few curry leaves over the top. The dish should be like a thick stew.
1/4 lb pumpkin
1 handful dried red beans
1 cup coconut milk
1 tsp salt
3 green chilies, cut lengthwise
1 piece ginger, 1 inch, cut lengthwise into slivers
1 tsp coconut oil
