STEPS:

1. Heat the oil in a skillet over medium heat. Add the cloves and cinnamon stick. When the oil is hot, add the onion and fry for about 15 minutes.


2. When the onion browns, add the red chile powder, cumin, turmeric and salt.  Add the garlic paste Stir in a little bit of water to make the masala, about 1/8 cup.


3. When the masala is done and oil seems to separate from the paste, about 5 minutes, add the tomatoes and green chiles.


4. After 5 minutes, stir in the mushrooms and fenugreek leaves. Reduce the heat to low. Cook for another 5 minutes or until the mushrooms are tender.


TIPS:

- To reduce the heat, cut the red chile powder to 1/8 teaspoon.
- Serve with chapatis.
