1. Heat the oil and roast the dry ingredients one by one except for the salt.
2. Coarsely grind them in a blender.
3. Transfer to an airtight container.
- Serve Mulaga Podi iwth Idli and Dosa. Stirring about one tablespoon of oil into 2 tablespoons of Mulaga Podi make a very flavorful accompaniment.

1 1/4 cup dried red chilies
1/2 cup Bengal gram dal
1/4 cup sesame seeds
1 tsp asafetida
1 tsp salt
2 tsp oil
Mulaga Podi, also called Gunpowder, is a traditional powdered spice mix that is usually served withDosa. The flavor is fantastic due to the asafetida, dal and chiles. One word of caution: this is called gunpowder for a reason - it is hot! It is one of my favorite condiments in Indian cuisine!
