INGREDIENTS:

Hot Onion Spread:

2 Tbs oil

1 tsp mustard seeds

1 tsp cumin seeds

3 dried red chiles, stems removed, seeds removed

1 large red onion, cut into slivers

1/4 cup water

1 tsp salt

1/2 tsp paprika

1/4 tsp sugar

Burgers:

1 Tbs oil

1/2 tsp garam masala

1/4 tsp ground cumin

1 tsp salt

1/2 tsp ground black pepper

1/2 red onion, finely chopped

2 green chiles, minced

2 cloves garlic, minced

1/2-inch piece ginger, minced

1 lb ground sirloin

To Serve:

4 layered parotha or whole wheat naan

chopped romaine

sliced tomatoes

2. In a large bowl, combine the onion-chile mixture and ground sirloin then mix well. Form into 4 round patties. Refrigerate for 15 minutes to let the flavors blend.

Burgers:

1. Add the oil to a heated skillet, on medium-low heat. Stir in the garam masala, cumin, salt and pepper. Fry the onion, chiles, garlic and ginger until the onion is translucent. Let cool.

Madras Burgers [Indian fusion Recipe]

The essence of Madras spices are incorporated into these delicious burgers. They are seasoned with a special blend of spices and vegetables including garam masala, cumin, onion, garlic, ginger and, the South Indian favorite, green chiles. The burgers are topped with a homemade spread that is made with caramelized onions and red chiles. The burgers are served on flaky South Indian layered parothas. 

2. Put the onions and chiles in a blender with the water. Grind until it becomes a smooth paste.

3. Transfer the ground onions back to the pan over low heat. Simmer, stirring frequently, until it becomes a thick paste, about 3 to 5 minutes. Set aside to cool.

3. Grill the patties until cooked through.

STEPS:

Hot Onion Spread:

1. Heat the oil in a skillet over medium-low. Add the mustard seeds. When they begin to pop add the cumin seeds and red chiles. Fry for 1 minute then add the onion and fry until they are thoroughly caramelized and brown, about 30 minutes. Remove from the heat and let cool.


To Serve:

1. Heat the layered parotha on a tava or skillet until golden brown. Cut in half.


2. Place a burger on each paratha, add a generous spoonful of the Hot Onion Spread and top with some romaine, a tomato slice and the other paratha half.
