This Simple Green Lentils recipe is so easy to prepare. It can be made in just one pan using only a few spices. Without a complicated masala to mix and with minimal chopping, it can be prepared in a very short period of time.
1 cup French green lentils
1 bay leaf
1 medium carrot, peeled and chopped
1 1/2 tablespoons olive oil
1 cup yellow onion, chopped
1 garlic clove, chopped
1 teaspoon ground cumin
1 teaspoon red chile powder
1 pinch turmeric
3/4 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons cilantro, chopped
1. Pick through the green lentils for debris. Rinse in cool water. Place the lentils, the bay leaf and 2 cups of water in a large sauce pan then bring to a boil. As soon as it boils, reduce the heat to low and simmer for 20 to 30 minutes, until tender. Drain off the water. Transfer the lentils to a bowl and set aside.
2. Add the chopped carrot and 1 cup of water to the pan. Bring to a boil then simmer until tender. Drain. Transfer the carrot to the bowl with the lentils.
3. Return the same pan to the stove over medium-low heat. Add the olive oil. When hot, add the onion and fry until translucent. Add the garlic and cook for 1 minute. Reduce the heat to low. Stir in the spices and cook for 1 minute. Add the lentils and carrot. Stir to mix them well with the spices. Cook for a few minutes to allow the flavors to blend. Stir in the chopped cilantro. Adjust the salt to taste and serve.
