1. In a skillet over medium heat, add 1 tablespoon of oil and then add the mustard seeds. When they pop, add the urud dal and curry leaves. After a minute, add the beans, turmeric, salt and a half cup of water.
2. Cover the skillet, let the beans boil for 5 minutes, stirring occasionally. When the beans are nearly cooked, add the chilies. Remove the lid and let the beans cook until most of the water evaporates.
3. Garnish the green beans with coconut.

This recipe, Green Beans with Coconut, is a variation on one from Kachi's Kitchen that has been simplified to help get dinner on the table more quickly. In less than 10 minutes you can have a healthy side dish that the whole family will enjoy. In fact my son, who did not care for the original dish (Pacha Payru Upperi), loves this version! Serve this along side any entree or meal.
