STEPS:

Cauliflower:
1. Preheat the oven to 425 degrees F.

2. Whisk the olive oil and spices together in a small bowl.

3. Place the cauliflower in a large rimmed baking dish. Pour the spiced oil mixture over the cauliflower and toss together to coat evenly. Spread cauliflower in a single layer on the baking sheet. Sprinkle with kosher salt.

4. Tossing occasionally, roast in the oven for 30 to 35 minutes until cauliflower is almost tender and browned.

INGREDIENTS:

Cauliflower:

1 medium head cauliflower, cut into medium florets

3 Tbs olive oil

1 tsp ground cumin

1/2 tsp turmeric

1/2 tsp red chile powder

1 tsp garlic powder

1/2 tsp kosher salt

Masala:

1 Tbs olive oil

1 tsp cumin seeds

1 cup onion, finely sliced

1 tsp cumin, ground

2 Tbs coriander, ground

1/2 tsp turmeric

1/2 tsp kosher salt

1 tsp garam masala

1/2 tsp red chile powder

2 tsp garlic, minced

2 tsp ginger, minced

3 Tbs tomato paste

3 cups cooked chickpeas, rinsed and drained

1 Tbs lemon juice

1 green chili, thinly sliced

3 Tbs cilantro, chopped

Roasted Cauliflower and Chickpea Masala  [Indian fusion Recipe]

Based on my love of roasted cauliflower and spiced chickpeas, I created this recipe to combine them into one delicious and savory vegetarian dish. The cauliflower florets cook in the oven with a simple blend of Indian spices while a rich masala  made from spices, tomato, onion, garlic and ginger simmers on the stove with the chickpeas. When the cauliflower and chickpeas are ready, everything is combined into an aromatic dish.  This can be served as an entrée or a side.

Masala:

1. In a saucepan, heat 1 tablespoon of oil. Fry the cumin seeds.  Add onions and fry until they begin to brown then lower the heat.  Add the spices, garlic and ginger.  Mix and simmer for 3 minutes.


2. Stir in one cup of water and the tomato paste. Mix and bring to a boil.  


​3. Add chickpeas and lemon juice. Mix well. Cook over medium-low heat for 10 minutes.  If mixture is too dry, add more water. 

4. Preheat oven to 300 degrees.


​4. Combine the cauliflower, chickpeas, green chile and cilantro in a large baking dish.  Stir to mix well.   Place the dish in the oven and bake for 10 minutes or until evenly heated.
