1. Cut beef into small to medium sized cubes, about ½ inch on each side. 2. Scrub and peel the potato. Cut it into pieces and boil until done. Drain off the water and set aside. 3. While the potato is cooking, heat 2 tablespoons of oil in a large pot and sauté the shallots until brown. Add another 2 tablespoons of oil and all of the spices (ginger, garlic, turmeric, cumin, coriander, chile and garam masala). Mix well and fry the spices for 5 minutes, stirring often, over medium heat to bring out their flavor. 4. Add the tomatoes, tomato paste, 1 teaspoon of salt and ¼ cup of water. Stir and cook for 5 minutes over medium heat. 5. Add the beef and mix well. Cover the pot and cook for 15 minutes, stirring occasionally. 6. Add 1½ cups of water to the pot. Cover and bring it to a boil. Reduce the heat and add the potatoes. Simmer for 10 minutes. If the curry becomes too thick, add another ½ cup of water. Test the curry and add ½ to 1 teaspoon of salt as needed. Stir in the lemon juice and garnish with the cilantro before serving.


- I use a good quality cut of beef, like top sirloin, when I make this dish. Because the meat is cut into small pieces, you can use the cut that is on sale that week. Since beef isn't commonly eaten in India this is usually made with lamb.

- Serve the Beef and Potato Curry with any simple rice dish, a simple vegetable dish and chapatis.


The traditional method of cooking potatoes in India is to boil them then peel and cut them for use in a recipe. In Kachi’s younger days, vegetable peelers were not yet available to make the job easy. Instead, she just pulled off the skins after the potatoes were cooked. This Kerala recipe has been modified from the original by boiling peeled and cut potatoes to reduce the cooking time.
